You don't always travel to seek something new. Sometimes you choose to return, to rediscover a familiar and deeply authentic balance. At the Seeleiten Lake&Spa Hotel, overlooking Lake Caldaro and surrounded by the vineyards of South Tyrol, luxury is measured in harmony: in the landscape, in the family hospitality, and in a cuisine that reflects the territory with elegance and identity.
The hotel
Not all trips stem from a desire to discover something new. Some originate from a desire to revisit places that have left a mark, that have made us feel good. My return to the Seeleiten Lake & Spa Hotel in Caldaro was just that: a conscious choice. Not out of habit, but because of that subtle nostalgia and “longing” that remains when you think back to a light, a scent, a feeling of peace. Upon arrival, I immediately recognized the landscape. The orderly vineyards, the nearby lake, the mountains that discreetly guard this corner of South Tyrol. There is a composed beauty here, never ostentatious. The first thing I rediscovered was the light. The soft light that caresses the hills in the morning and reflects on the water. The location is privileged: surrounded by greenery, a few steps from the lake, surrounded by rows of vines that tell the story of this beautiful corner's wine-growing tradition. It is a landscape that invites you to slow down, breathe more deeply, and take your time.

WHERE THE LANDSCAPE SPEAKS, THE STRUCTURE LISTENS
The structure blends naturally into its surroundings: elegant, bright, welcoming without being formal. The large windows capture the greenery and bring it inside; the warm materials, wood, and clean lines convey an idea of measured comfort. For me, it was like returning to that small balance of harmony: opening the window, breathing in the fresh lake air, watching the rows of trees change color as the day progresses. Photographs of moments to be lived to the fullest.



Then there is hospitality. And here it is the Moser family who leave a distinct, courteous, smiling impression. Franz, Benita, Daniel, and Dominic Moser make their presence felt, but not in a contrived way, rather in an authentic manner. It is almost as if it has always been their vocation. On the one hand, hôtellerie, on the other, oenology and viticulture with the Moser Estate: three generations, over 40 years of activity, with full respect for nature, its rhythms, and its fruits. This translates into a bottle of good wine or a relaxing stay at the hotel. The only 5-star hotel in the area, it has also been awarded the Michelin Key for two years.

Because one thing stands out clearly, and that is the attention, the memory, that rare ability to make guests feel welcome, not simply accommodated. Returning also means this: seeing familiar faces, a smile that recognizes you. It means enjoying the day, choosing between a sauna in the exclusive private beach club on the lake shore, a swim in the 28°C tropical pool, or opting for the indoor pool or the outdoor panoramic pool with 32°C water. In short, here, wellness has a dedicated area of 3600 square meters, not only for adults but also for children.


TIME FOR THE KITCHEN
And then there is the kitchen. Another heart of Seeleiten. Every evening is a story that takes shape on the plate. I still remember the delicacy of an appetizer that enhanced the freshness of local ingredients, the precision of flavors, the balance between South Tyrolean tradition and contemporary lightness. It was farmer's turnips, horseradish mousse, daikon, and bread chips.


Nothing is left to chance, but nothing is excessive. It adapts to a variety of palates, becoming pleasant and easy to understand. It is interpreted by the young Erduan Redjepi, who worked his way up from apprentice to chef. With patience, determination, observation, and listening skills. He learned techniques and methods from his predecessors, building his own idea of cuisine, and then expressing it. Waiting for his moment. And he explains it with pride, "I am proud to have decided not to change, to invest in my future in this place and alongside the Moser family. I started in 2013 with Chef Oliver Thialer, my mentor for nine years, almost a second father, who gave me the opportunity to take charge of an entire batch almost immediately. He was an example not only in terms of cuisine but also in terms of organization and management." This influence continued with Chef Carlo Alberto Tollin, who gave him further solidity and confidence.



FROM BREAKFAST TO DINNER
Erduan Redjepi's vision and supervision guide the entire day. Breakfast is a moment that invites you to enjoy a slow pace: fragrant bread, local products, carefully prepared desserts, homemade jams. It is the kind of morning that is not consumed in a hurry, but savored while watching the day awaken outside. At dinner, on the other hand, a clear philosophy is evident: respect for the territory, seasonality, and the absolute quality of the ingredients. Even the wine list tells the story of Caldaro and its vineyards, with selected labels, including those from the Moser estate, of course, which accompany the dishes without overpowering them. “My aim is to offer cuisine that satisfies people. Our clientele is diverse, also in terms of origin,” says the chef. “When I create and think about a dish, I start with the main ingredient and then add the others gradually. But I like to leave room for surprise in the menu, space for the taste of the tasting.”

And indeed, the menu does not provide too much information, only the most significant details. But the common thread remains the territory, a generous and lush land that smells of purity. “I care deeply about regional cuisine and local products, and I like to combine them with a Mediterranean vision and a few small international influences. With balance. To do this, I work with local producers, including a farmer who supplies me with seasonal fruit and vegetables. South Tyrolean tradition is not only present in the evening restaurant, but also at breakfast. I would say that 98% of the products are local.”

THE PLEASURE OF RETURNING
Returning to Seeleiten reminded me that true luxury is not the exceptional, but the consistent. It is knowing that there is a place where the landscape comforts, the structure welcomes with moderation, the family hosts with authenticity, and the cuisine knows how to pamper with elegance and calm.
So yes, we return to places where we feel good. And some returns have the flavor of certainty.
