The prestigious MICHELIN Guide Italy continues its constant updating, welcoming 25 new establishments to its selection in October. These addresses, chosen by inspectors traveling around the country, anticipate the awarding of the coveted Stars and Bib Gourmands that will be revealed during the annual ceremony.

A gastronomic journey from north to south

The new discoveries span different regions and culinary philosophies, with a particular focus on the link with the territory and the quality of the raw ingredients:

The flavors of the sea and the islands:

  • On the Island of Elba, in Portoferraio (LI), the picturesque restaurant Le Viste offers traditional seafood cuisine, located in simple surroundings right on the shore.
  • In Abruzzo, in Alba Adriatica (TE), Da Gianfranco serves only cod as its seafood dish, pairing it with a wide selection of meats, the passion of chef and butcher's son Gianfranco Verdecchia.
  • On the Abruzzo coast, in Pineto (TE), Resilienza offers a balanced reinterpretation of regional traditions from land and sea.

  • In Sardinia, in Palau (SS), Il Paguro, in the exclusive setting of Cala Capra bay, focuses on classic, simple cuisine, showcasing the excellent local catch.
  • Also in Sardinia, in San Pantaleo (SS), Mizuna Restaurant is a benchmark for Japanese cuisine, where the Italian chef mainly uses the freshest Sardinian fish for sushi, gyoza, and other specialties.
  • In Campania, in Pompei (NA), Capasanta sees young chef Paolo Del Giudice combine seafood flavors with modern techniques in a minimalist setting.

Lots of new developments, from big cities to historic villages:

  • In Venice (VE), Osteria Giorgione da Masa, near Campo Santi Apostoli, combines Japanese home cooking with Venetian cicchetti in an approach that breaks all the rules.
  • Also in Venice (VE), hidden in the NH Collection Palazzo dei Dogi, Da Lorenzo – Al Giardino Segreto offers an oasis of taste with the signature of Paulo Airaudo, combining technique, elegance, and Japanese accents.
  • In Milan (MI), The View Milano features Valerio Braschi at the helm, offering contemporary cuisine and a spectacular terrace overlooking Piazza del Duomo.
  • In Rome (RM), UMA Roma offers innovative recipes with excellent value for money in a minimalist setting with an open kitchen.

  • In Norcia (Perugia), Il Granaro del Monte returns to the historic center inside Casa Bianconi, offering classic pork products and traditional Umbrian dishes, with excellent grilled meats.
  • In Bevagna (Perugia), Ottavi Mare blends the flavors of the sea with Umbrian tradition in well-balanced dishes.
  • In Abruzzo, in Sant'Omero (TE), the historic Zunica 1880 is reborn at Villa Corallo. Chef Gianni Dezio, a student of Niko Romito, focuses on a few excellent ingredients, often self-produced, for high-level cuisine that combines aesthetics, taste, and local inspiration.
  • In the historic heart of Albenga (SV), Il Posticino is a small, intimate restaurant offering seasonal seafood cuisine.

Mountains, valleys, and a return to roots:

  • In Liguria, in Urbe (SV), in the heart of the Apennines, the La Civetta tavern celebrates seasonality with Ligurian and Piedmontese influences.
  • In South Tyrol, in Albes (BZ), Kircherhof is an ancient 17th-century farmstead offering organic and sustainable cuisine based on local traditions but with a contemporary twist.
  • In Molini di Tures (BZ), chef Tina Marcelli continues her journey at JOHANNS, focusing on fermentation and sustainability, with two tasting menus that showcase the region and her vision.

  • In Egna (BZ), inside the Zur Post hotel, Vincenzo Degasperi offers tasty Italian cuisine with fresh ingredients and a carefully selected wine list.
  • In Piedmont, in Castelnuovo Belbo (AT), Da Iumén, with five generations of history, blends Piedmontese tradition and innovation.
  • In Campiglia Cervo (BI), in the heart of the Cervo Valley, La Bursch is a romantic retreat in a converted village. Young chef Erika Gotta offers the best local ingredients in carefully prepared, modern dishes.
  • ​​​​​​​In Molise, in Castel del Giudice (IS), in the Borgotufi hotel, Mia Ristorante sees Marco Pasquarelli reinterpret local ingredients in a modern key, with fish options also available.

  • On the slopes of Mount Etna, in Milo (CT), Da Rinuccio offers almost exclusively meat dishes, fresh pasta, and mushrooms in a family-friendly setting with a beautiful glassed-in veranda.
  • In Cilento, in Capaccio (SA), Club Morera, in a rustic but elegant farmhouse, offers regional cuisine with a contemporary twist, focusing on Cilento ragù and tagliolini with four tomatoes.
