The aristocratic soul of the San Régis
The San Régis is not just a hotel: it is a piece of living history. Founded in 1857 by Monsieur Petit, it was taken over in 1923 by Simon André Terrail, who transformed it into a luxury residence. In the 1950s, he sold the George V hotel but kept its furnishings, bringing them here to the San Régis and giving the place a noble aura. Since 1984, it has been run by the Georges family: today, Elie Georges' two daughters manage this residence, bringing elegance, discretion, and family warmth to 12 rue Jean Goujon.

It opens with an exclusive infusion: “L'Infusion San Régis,” created with Les 88 Thés. A refined infusion, rich in notes of coconut, anise, fennel, heather, licorice, lavender, tonka bean, and cinnamon... A liquid symphony of aromas and well-being. This is followed by the courses, designed as acts of a gastronomic play.
Fruit, desserts, and natural poetry
We begin with red cherries, plump and chilled, which open the palate with freshness. Then come the scones – classic, elderflower and licorice – accompanied by a selection of toppings, including lavender honey, cream and lemon. The round, soft choux pastry fingers rest on buckwheat seeds: an irresistible play of textures.


Creativity in every dish
The highlight comes with the rhubarb tart, created by Mathieu and Valentin Vermes, enhanced with Ume plum vinegar, cress, marigold and sumac: a bold and harmonious combination of fruit, vegetables and spices. The dessert is a celebration of strawberries in a thousand forms: fresh, minty, alcoholic, granita, and ice cream. The meal ends with a sumptuous gâteau au chocolat: São Tomé chocolate, farm milk ice cream, cocoa nibs, and puruxy. A finale that tastes of childhood, sweetness, and home.
