Matt Abé is leaving his role as chef patron at the legendary Gordon Ramsay's restaurant to strike out on his own: by the end of the year, he will open his own business in the former location of Le Gavroche in London's Mayfair district.

Abé spent more than a decade climbing the ranks of Ramsay's three-star Michelin restaurant before taking on a significant position, that of patron, in 2020.

“I am extremely grateful for Gordon's confidence in me, but the time has come for me to strike out on my own,”, says Matt, as reported by Restaurant. The news came after the news outlet revealed last week that Ramsay's Union Street Cafe Limited had successfully applied for a transfer of its operating license for the Upper Book Street site and that Abé would presumably run the restaurant there.

He continues, “This is a dream come true for me, after 16 years at the side of a great master I am ready to open my own business and demonstrate my skills!”. The restaurant will be opened by the end of the year, right where Le Gavroche once stood, in the English capital.

"That place holds indelible memories; I was 20 years old in 1989 when I started under Albert Roux. So when I heard that the property would be available, I didn't think twice, and I secured a 15-year lease: Matt is a real talent, and as such he deserves to be supported properly. In addition, he will continue to serve as a consultant for Gordon Ramsay Restaurants. His work is really valuable to me,", says the Hell's Kitchen star.

Bolstered by his experience alongside high-caliber figures, the chef is ready to take on yet another professional challenge and advance his gastronomic vision, while maintaining strong ties to the past. Thus, the Mayfair district is preparing to welcome an entirely new sign, one that is destined to make waves and leave its mark. The goal is clear: to capture haute cuisine enthusiasts and consolidate its name among the industry's greats.
