Carlo Cracco will temporarily transform the Waldorf Astoria Maldives Ithaafushi into Cracco Portofino. Everything is ready for the chef's new format in the Maldives.
The news
We're used to seeing Chef Carlo Cracco in Milan at the helm of his Michelin-starred restaurant, Cracco. However, from November 20th to December 11th, the Italian chef and well-known face on the small screen will be at the Waldorf Astoria Maldives Ithaafushi, where he will set up his personal Cracco Portofino pop-up.

Having already visited the Waldorf Astoria Maldives Ithaafushi in July, Cracco was inspired by the setting of the Glow restaurant, comparing its sunset views to those of another of his gourmet venues in Italy - Cracco Portofino, as we previously reported. Guests at this new pop-up will enjoy a multi-course menu rooted in Italian tradition.

Dishes showcase Cracco's creative execution while bringing to the table the essence of Italian gastronomic culture: starters like veal with tuna sauce or soft egg with pickled vegetables; iconic pasta dishes such as trofie with pesto, spaghetti with clams, lobster ravioli, and Cinque Terre anchovy cream risotto. Then the inevitable Milanese-style veal cutlet and mozzarella in carrozza, and finally, desserts such as mascarpone with strawberries, citrus semifreddo from Portofino, and hazelnut gianduia chocolate sphere.

Marco Araujo, resort manager of Waldorf Astoria Maldives Ithaafushi, stated, "We are thrilled to welcome esteemed Chef Carlo Cracco. The exclusive Cracco Portofino experience on our island combines two of our fundamental principles, exceptional luxury hospitality and a strong, targeted culinary offering. We invite guests to embark on a sensory journey into Carlo Cracco's unmistakable world, presented in this splendid location. This will further solidify the reputation of Waldorf Astoria Maldives as a true gastronomic destination."

World-renowned chef and TV star Carlo Cracco, through the prestigious Cracco Portofino pop-up, will take over Glow for an exclusive period of three weeks, from November 20th to December 11th. Glow, famous for its "garden-to-table" concept, welcomes guests to savor the refined flavors curated by Carlo Cracco himself. The menu is entrusted to Mattia Pecis, a young and talented chef who grew up in the team of Ristorante Cracco alongside and under the guidance of the master. In the enchanting atmosphere of the Maldives, Cracco offers a gastronomic adventure, showcasing the best that the local area has to offer on the dining table.
