"I think I know why we lost a star, I'm not dejected at all," he said after learning of the downgrade, the day before the guide's official presentation. "Maybe it will also relieve some tension because two stars are stressful. I have always cooked for my clients and not for the guides. I will never deviate from this philosophy."

But performing both functions suck too much energy from me." His son Baptiste for his part, although part of the restaurant team, does not intend to take charge of the restaurant. "It's too big, too complex and the name Buyens too heavy. Our 16-year-old daughter prefers to continue with her studies. So, there is no successor, nor have I looked for a buyer. In 18 months, it will be over. It will end badly, but it is a deliberate choice."
