Sardinia is the beating heart of the wine list, which devotes ample space to its stylistic differences, native grape varieties, and the stories of producers who work with passion and respect for the land. “Grape varieties such as Vermentino, Cannonau, Carignano, Monica, and Bovale,” says Sergio Pusceddu, "in addition to being the stars of the wine list, become tools for telling the story of an authentic Sardinia that is often little known. There is no shortage of heroic wineries, those that operate in difficult territories but with a clear and sustainable vision." Particular attention is paid to biodiversity and natural production, in full accordance with the resort's green ethics. Organic, biodynamic, and low-impact wines are chosen beyond trends because they embody shared and tangible values.

“Alongside Sardinia's wine heritage, the drink list naturally opens up to the entire Mediterranean basin: from mainland Italy to France, Spain, and Greece, it forms a coherent mosaic in which the wines share a common vocation for freshness, minerality, and brightness,” says the sommelier. The focus is clear: elegance, drinkability, and expression of the terroir. There is no search for “loud” labels; rather, bottles that speak softly, with depth and identity. The great international maisons find their place, but with restraint, as a stylistic reference rather than a showpiece. Also interesting is the presence of rare or unusual labels from lesser-known territories: a cultured but accessible offering, capable of intriguing both novices and experts alike.
