MICHELIN Star Chef Michel Troisgros Passes on the Legacy to Son, César

There is great anticipation around the cuisine that César Troisgros, representing the fourth generation of a family that has made history, will be able to express.

The dynasty of the Troisgros, a glorious lineage of French cuisine, never ends. Now, the fourth generation is emerging 37-year-old César, Michel’s youngest son. Michel is about to turn 65 on April 2nd and has announced his intention to retire and pass on the baton.

"The movement has been underway for several years, but now is the time for him to have a free rein, to bloom and make it known that he is the only head chef in the kitchen. Now he is the chef, and I step back," Michel proudly declared. However, he will continue to lead the Troisgros Consultants group with his wife Marie-Pierre, which includes several other establishments and employs around one hundred people. He is also building an agricultural complex with a bakery in Ouches, which will be managed by his daughter Marion.

There is great curiosity about the cuisine that the young Troisgros will express. After training at the Institut Paul Bocuse, he cut his teeth in several French and American establishments, working alongside Michel Rostang, the Roca brothers, and Thomas Keller. It's not a small responsibility for him, as the restaurant has been making a name for itself for almost a century. It was in 1930 when Jean-Baptiste and Marie laid the foundations of the legend in front of the Roanne station. Here, Grandfather Pierre and brother Jean earned the first MICHELIN star in 1955, the second in 1965, and the third in 1968. A distinction that has lasted for over 50 years.

Their nouvelle cuisine, revolutionary for its plating, light cooking with vaguely asian flavors, and striking acidity, has made history. It was when Jean suddenly passed away in 1983 that Michel took over the kitchen, eventually taking control in the early 90s. Finally, in 2017, they moved from Roanne to Ouches, to their current location in the countryside.

It is under the sign of continuity that the story goes on, as stated in the official social media release: "César is the youngest of the Troisgros family. Along with his brother Léo, he represents the third generation of chefs. Now in charge of the three-starred restaurant in Ouches, he takes pride in preserving the savoir-faire, offering thoughtful, sensitive, and creative cuisine. His native region, the agricultural and rural area of Roanne, is an invaluable asset and an endless source of inspiration for him. With great humility, he often recalls that fame is a collective success, the work of an entire team that cultivates the true family spirit."
