There’s a difference between being the face of a cuisine and giving it a home. In Versailles, the French chef takes on this second challenge, entrusting five ingredients with the task of conveying his culinary vision.

Television has brought him popularity, name recognition, and an audience that follows him far beyond the confines of the kitchen. But for Norbert Tarayre, his craft continues to have a clear focus: that of a restaurant, with a kitchen team at work, a menu to create, and guests to win over. This fall, in Versailles, the chef opened La Table de Norbert, a restaurant bearing his name that marks a new chapter in his career.

From Top Chef to the Kitchens of Luxury Hotels

The general public first got to know Norbert Tarayre in 2012, when he competed in the third season of Top Chef, airing on M6, and took third place. His irreverent personality, his candid way of speaking, and a sense of humor far removed from the solemn tones often associated with haute cuisine quickly made him one of the most recognizable figures on French culinary television.

His popularity was further cemented by La Meilleure Boulangerie de France, where he served as a judge for seven seasons. He then hosted *Norbert, commis d'office*, bringing his own style to social media and YouTube as well. In 2026, he joined the judging panel of *Le Meilleur Pâtissier*, alongside Cyril Lignac and Roxane, solidifying his well-established presence on television.

Behind the persona, however, the chef remained. Tarayre helped develop the Bistrots Pas Parisiens and, in 2023, joined the kitchen staff at the restaurant 19.20, located inside the Prince de Galles hotel in Paris. This collaboration continues to this day, even as he prepares for the new opening in Versailles.

Over time, his business has expanded far beyond restaurant management. His commercial partnerships include one with the Quick fast-food chain, while more recently he created the menu for the restaurant Brume in Lyon.

The Challenge of Running a Restaurant Bearing His Own Name

La Table de Norbert is part of a journey marked by entrepreneurial ventures, collaborations, and changes in direction. The fame he earned on camera has opened many doors, but running a restaurant means grappling with day-to-day work that goes beyond mere visibility: it requires a distinctive concept, a solid team, and the ability to consistently deliver the quality promised to guests.

It is precisely in this arena that Tarayre’s new venture will unfold. For the first time—at least at this stage of his career—his name becomes the centerpiece of a culinary project conceived as a personal home. The menu, *Du Brut au Sublime*, already sets the tone: a dialogue between simplicity and technique, between the raw flavor of the ingredients and the chef’s ability to transform them through his craft.

Initial interest looks promising. According to the French trade press, more than 3,000 reservations had already been made before the grand opening, and the calendar was fully booked through Christmas. The project is the result of twenty years of experience in a wide variety of kitchens and restaurants. Its identity is encapsulated in the concept “Du Brut au Sublime”: five ingredients—artichoke, beef, lobster, monkfish, and duck—serve as the starting point for two interpretations. The “Brut” version lets the ingredients speak for themselves, while the “Sublime” version showcases the chef’s creativity and technique. You can also choose a five-course tasting menu, priced at 90 euros. But the real test will come as the weeks go by, when the attention generated by his TV persona will have to give way to the reputation he builds at the table.
