Seven years of ocean-themed displays, videos that have gone viral across the globe, and a never-ending parade of food lovers enchanted by his famous trompe-l'œil creations. Cédric Grolet’s renowned flagship store on Avenue de l’Opéra in Paris is turning a new page and preparing to write an entirely new chapter.

As of September 21, the Parisian temple of sweets closed its doors to kick off a massive renovation project. The superstar chef’s goal? To completely redesign the spaces to offer customers an immersive, never-before-seen experience.

A two-story temple of gourmet luxury

The heart of the transformation beats on the upper floor, where the historic tea room is rising from its ashes to welcome guests in an even more exclusive atmosphere. This is not merely a cosmetic refresh, but a true conceptual revolution designed to elevate the hospitality experience: the idea is to offer visitors a break in the salon marked by comfort and wonder, transforming the sweet interlude into a true haute cuisine ritual.

While work continues on the main floor, business goes on as usual: the ground floor remains open for those who want takeout or the convenient click-and-collect service, while for those looking for a drink or a hot beverage, the Cédric Grolet Café is always just a stone’s throw away.

The dining room will, however, retain its two main dining options:

  • The Custom Breakfast: Served in the morning, it includes its iconic flaky pastries (such as superb croissants and pain au chocolat), hot beverages, and signature savory options.
  • The legendary “Tea Time”: A guided tasting menu centered on its most famous sweet creations and carefully curated savory bites.
  • Strict Access Rules: Just as in the past, access to the new dining room will not be open to the public. It is mandatory to reserve a table online via the official website, selecting a specific time slot. Seats are very limited, and time slots typically sell out within just a few minutes of reservations opening.

From Rue de Castiglione to the Global Stage

Opened in 2019 and located just a stone’s throw from the magnificent Opéra Garnier, this destination has quickly become a must-visit for international food and wine tourism. This recognition stems from Grolet’s visionary journey—which first captured the public’s imagination during his years as head pastry chef at the Hôtel Le Meurice—and has now taken the form of a global empire.

From his first iconic creations in Paris (where the Rue Danielle Casanova concept also shines) to the luxury locations dotting the global map: from London to Singapore, via Saint-Tropez, the snowy slopes of Val-d’Isère, and the recent conquest of the Principality of Monaco at the Hôtel de Paris Monte-Carlo.

Design in the Service of Emotion

With this radical redesign, Cédric Grolet demonstrates how contemporary pastry-making is no longer defined solely by flavors and textures, but must be inextricably intertwined with interior design and digital storytelling. In an era when every creation is destined to go viral in a matter of seconds, the décor and atmosphere become essential tools for captivating the customer even before the first bite.

The new Avenue de l’Opéra is thus poised to become not just a renovated pastry shop, but the definitive manifesto of a new era of sweet luxury: the official reopening date for the new space is set for November 18, 2026.
