The son of three-star chef Gilles Goujon is opening a boutique dedicated to his creations, including pralines, chocolate bars, and trompe-l’œil desserts. Following accolades from Gault&Millau and the Michelin Guide, the young pastry chef is developing his own identity in the heart of the Corbières region.
In Fontjoncouse, a small village in the Aude region that has become a culinary destination thanks to Gilles Goujon’s Auberge du Vieux Puits, the family name now extends to the world of chocolate as well. Axel Goujon, son of the renowned French chef, has opened “Axel et la chocolaterie,” a boutique entirely dedicated to his creations, just a short walk from the three-Michelin-starred restaurant. It’s a new space where the young pastry chef can develop his own personal style, after making a name for himself with his work in pastry.
The selection includes chocolate bonbons, bars, gift sets, and original creations, with a special focus on trompe-l’œil designs. Among the specialties are chocolate cigars presented in their boxes—delicious treats that play on the element of surprise and their resemblance to products of an entirely different nature. The shop also pays homage to the world of *Charlie and the Chocolate Factory*: some chocolate bars may hide a golden ticket that allows you to win a meal at the Auberge du Vieux Puits!

From Training to His First Accolades
After training at the hotel management school in Montpellier, Axel Goujon honed his skills at several leading French pastry establishments, working with Patrick Roger and Olivier Bajard and also gaining experience in the world of Paul Bocuse. In 2019, he rejoined the family business, gradually taking on responsibility for the pastry kitchen at the Auberge du Vieux Puits.
His career has been recognized with several awards. In 2025, he received the Gault&Millau Pâtissier Occitanie trophy and was selected as one of ten professionals honored with the Michelin Guide’s Passion Dessert award, created in collaboration with Valrhona.
The opening of the chocolaterie represents another step toward establishing an independent venture, while maintaining a connection to the restaurant’s culinary heritage. Chocolate becomes the medium through which to explore pairings, textures, and shapes, building on the work already done in the restaurant’s pastry kitchen.

A New Generation at the Helm of the Goujon House
The family thus continues to develop its business in Fontjoncouse through a variety of skills. Enzo Goujon works in the kitchen, while Axel focuses on pastry and now chocolate. The new boutique also helps keep alive the connection to the Corbières, a region scarred by the fires of the summer of 2025.
The chocolate shop was presented to several chefs from Occitanie during the “Chefs à Table” event, an occasion that allowed industry professionals to learn about the new project.
Axel et la chocolaterie is located at 5 Avenue Saint-Victor, 11360 Fontjoncouse, in the Aude department, a short distance from the Auberge du Vieux Puits.
