Enough with the endless monologues about the type of sea salt sprinkled on the plate or the ancestral techniques for fermenting turnip greens. The haute cuisine revolution is all about simplicity, immediacy, and the pure pleasure of dining. Leading the charge against the rigid formalism of fine dining is Austrian chef Hubert Wallner, a pillar of Austrian gastronomy and owner of the gourmet restaurant bearing his name, which overlooks Lake Wörthersee in Maria Wörth.

The News

Starting this October, the Michelin-starred restaurant is introducing “Wallner Unplugged,” a Wednesday-night event designed to free diners from the superfluous and restore dinner to its primary role: a moment of convivial escape. Wallner’s concept has nothing to do with open-flame cooking or a lack of electricity; rather, it focuses entirely on the spirit of hospitality. From 6:00 p.m. to 9:00 p.m. every Wednesday through December, the restaurant will offer a brand-new seasonal tasting menu consisting of just four courses, accompanied by a carefully curated pairing of wines or non-alcoholic beverages, at a fixed price of 149 euros per person.

This is not a scaled-down or watered-down version of the traditional menu, but rather a signature culinary journey in its own right. The real difference lies in the pace and atmosphere: gone are the lecture-style presentations in the dining room and the endless sermons after each course. Guests will be welcomed by Hubert Wallner himself, acting as host, ready to share lighthearted anecdotes and behind-the-scenes stories from his kitchen with an informal, direct, and warm approach.

Having trained in the kitchens of masters such as Hans Haas, Jörg Wörther, and Martin Sieberer, Hubert Wallner has developed an unmistakable culinary identity over the years, blending Mediterranean lightness—with a strong focus on freshwater and saltwater seafood—with the alpine aromas of Carinthia. His list of accolades makes him one of Austria’s most distinguished chefs, boasting a Michelin star, four hats, and a score of 18.5 out of 20 in the Gault & Millau guide—which also named him Chef of the Year— four forks and 99 points out of 100 in the Falstaff guide, as well as the prestigious title of official ambassador for the Krug Champagne house in Austria. With this new initiative, the chef demonstrates that excellence and technical precision do not require rigidity: the future of fine dining hinges on accessibility, the warmth of hospitality, and the pure flavor of the dish.
