Rasmus Munk closes for 5 months a year: “But we’ll continue to pay 100 employees even during the shutdown”

A surprise move is shaking up the world of haute cuisine: Alchemist, the Copenhagen temple of holistic cuisine led by chef Rasmus Munk, has announced a radical overhaul of its business model: starting this December, the restaurant will close to the public for five months a year.

No crisis, no layoffs, and certainly no surrender in the face of rumors that have long been proclaiming the “end of fine dining.” On the contrary, this is a visionary decision to reinvent the future of haute cuisine.

What Is “Intermission”: Metamorphosis, Research, and Experimentation

The annual closure period will be called “Intermission” and will be entirely dedicated to research, artistic development, and experimentation. “I am taking this step to create the time and space necessary—for myself and my team—to continue pushing the boundaries of experimentation,” explained Rasmus Munk. — “It will be a period of metamorphosis, during which the entire team will shift its focus to reshaping and transforming the experience from within. The ambition is that each new incarnation of Alchemist will take us where we’ve never been before: wilder, more authoritative, and more ambitious than the last.”

During these five months, the more than 100 staff members will remain regularly employed and paid. Rasmus Munk rejects the idea of delegating the restaurant’s management in order to travel: the chef wants to immerse himself firsthand in the world’s culinary cultures (with study trips already planned to India and Japan) and devote entire months to designing his famous multisensory installations.

Revolutionizing the dining room and opening the labs to young people

The “Intermission” project isn’t just about cooking; it challenges the very idea of hospitality and social impact:

  • Top-tier training for the dining room staff: the 28 dining room staff members will undergo intensive training in leadership, psychology, and specialized masterclasses, with the goal of redefining the concept of hospitality for the future.
  • “Behind the Scenes” Tours: With doors closed for dinner, Alchemist will open its research areas to students and young gastronomy enthusiasts through accessible “behind-the-scenes” tours, offering a close-up look at the restaurant’s scientific and creative innovation process.

A New Business Model: The “All-Inclusive” Package

Supporting a five-month shutdown each year while maintaining a staff of over 100 people without resorting to layoffs requires a solid financial restructuring. For this reason, Alchemist will introduce a mandatory all-inclusive package for beverages (starting at 3,000 DKK (approximately 400 euros), in addition to the cost of the meal), which will cover wine pairings, champagne, tea, and all beverage tastings throughout the evening.

As Munk himself puts it: “Food is a means of conveying a message. We’re buying time to ask ourselves the fundamental question: what is the future of fine dining?”

November 2026: The Last Chance Before the Big Change

November 2026 will mark the last opportunity to experience The Alchemist in its current form, before the start of the first “Intermission” and the subsequent restructuring scheduled for 2027. For the occasion, the restaurant will offer two booking options—as stated in the newsletter recently sent to subscribers:

  • November 6–22 – The Alchemist Experience: The restaurant will be open as usual with the current tasting menu.
  • November 25–29 – Curtain Call: Five special and extraordinary evenings to celebrate Alchemist’s history. An extended menu will feature iconic dishes from the past paired with the rarest and most prized wines from the cellar.

Tickets for both experiences will go on sale Monday, September 21, at 5:00 p.m. (Copenhagen time/CEST). Reservations will be available only for tables of 2, 4, or 6 guests.

(Helpful tip for those trying to make a reservation: if your desired date is temporarily booked, the restaurant recommends trying again after 8–10 minutes, when options that have been selected but not finalized by other users are released back into the system).
