A potato tortilla that costs as much as a month’s salary inevitably has two outcomes: it intrigues and divides. On one hand, there are those who see it as a provocation; on the other, those who view it as yet another frontier of haute cuisine. One thing is certain, however: in Sant Boi de Llobregat, Catalonia, that price is real. To taste what is billed as the world’s most expensive potato tortilla, you’ll need 2,200 euros—but in this case, the money is only part of the story.

What makes this recipe so exclusive is, above all, time—or rather, the limited time available to prepare it. The ingredient around which everything revolves isthe Bonnotte potato, a variety grown on a small French island and harvested for only about two weeks each year. Its limited production makes it one of the most expensive potatoes on the market, with prices ranging from 300 to 500 euros per kilo. When the harvest ends, so does the chance to order this tortilla, which is thus destined to remain on the menu for just about fifteen days. Behind the idea is Eve, founder and CEO of the REBO restaurant, who has become popular on social media under the nickname “La Tortillera.” Her project stems from a simple question: How far can a dish—one that, in Spanish culinary culture, is part of everyday life—go? The answer takes shape through a selection of ingredients that prioritizes excellence without cutting corners.

The potato is the starting point, but the rest of the preparation follows the same philosophy. The tortilla is filled with grated white truffle, onions caramelized in Pedro Ximénez wine, Ibiza salt, and Spanish extra-virgin olive oil. Even the eggs are the result of years of research. Eve explains that she uses “ex-premium” eggs from Marán breed hens, the result of a breeding program that, according to the chef, took twenty years of work to achieve the desired quality.

Further elevating the dish’s value is the Iranian Beluga caviar, added to the preparation and considered one of the most precious elements of the entire recipe. The amount used in a single serving is estimated to be worth around 400 euros—a detail that helps explain how such an extraordinary final bill is reached.

We read on the Instagram profile of “Tortillera,” which launched a “promo” on May 22:

The tortilla, in fact, has been around for some time. However, it was a special guest who turned it into a viral sensation. Streamer Ibai Llanos decided to try it in front of his followers, helping to spread the dish’s fame far beyond the borders of Catalonia. He kicked things off with a joke: “I think you can pay in installments.” Then the tone shifted as he began tasting it.

The initial reaction is decidedly positive. “It's delicious. I have to say: it's truly impressive.” Words that acknowledge the quality of the dish, without automatically declaring it the best tortilla ever eaten. Shortly afterward, in fact, comes a comparison with a personal memory—one that no rare ingredient can easily replace: "For me, it's not the best tortilla I've ever had. I still prefer my grandfather’s, but this one is truly excellent.”

The tasting continues with the version topped with Iranian Beluga caviar. Here, too, the response is surprising. The most expensive ingredient in the recipe—at least according to Llanos—doesn’t necessarily improve the dish’s balance. “I think I prefer it without caviar—go figure.” An opinion bound to fuel the debate over how much luxury truly impacts the dining experience.

Yet the price doesn’t seem to deter everyone. Eve confirms that someone has already decided to spend 2,200 euros to experience this tasting. “Yes, there are people who have paid that amount for the tortilla.” A statement that echoes the irony of Llanos himself, who jokes about who might be able to afford such a purchase: “I don’t know if it’s Elon Musk or Lamine Yamal. I, however, received it as a gift.”

On the restaurant’s official profile, Eve sums up the essence of her offering in a few words: “It’s not a tortilla. It’s a once-in-a-lifetime experience.” A description that explains the project better than any list of ingredients. For some, it will remain an exercise in extreme luxury; for others, a different way of reimagining a classic of Spanish cuisine. Certainly, this tortilla has already achieved something that’s hard to buy, even for 2,200 euros: turning one of the simplest traditional dishes into a topic everyone is talking about.
