Éric Canino was born in the South of France, where he developed a deep connection with Mediterranean cuisine, characterized by fresh and authentic flavors. His career took a major turn when he began working with Michel Guérard, one of the pioneers of wellness cuisine. Under Guérard's guidance at Les Prés d'Eugénie, Canino learned to create healthy and tasty dishes using innovative techniques to maintain lightness and freshness. This training deeply influenced his culinary philosophy, which is fully reflected in the dishes he now prepares at La Voile.

In 2008, Canino took the reins of La Voile restaurant at La Réserve Ramatuelle, a luxury oasis near Saint-Tropez. His cuisine is inspired by the bounty of Mediterranean nature, using olive oil, herbs, fresh fish, and fruits and vegetables from the restaurant's own garden. His goal is to create a dining experience that celebrates authentic, natural flavors while maintaining a healthy, light approach. His menu, which includes an all-vegetable option, is a tribute to Provençal tradition revisited with creativity and technical precision.

In 2020, La Voile was awarded its second Michelin star, consolidating its status of gastronomic excellence. Canino's cuisine has been praised for its ability to maintain a perfect balance between intense flavors and lightness, creating dishes that offer a guilt-free gourmet experience. Among his most famous dishes are Brittany langoustines, served both raw and cooked, and his refined interpretation of seasonal vegetables, which are the centerpiece of his healthy menu.

In addition to his culinary talent, Canino is known for his innovative approach to health and wellness. He eschews the use of animal fats and refined sugars in favor of olive oil and raw cane sugar to create dishes that are not only delicious, but also healthy.
