Francesco Calò is an internationally renowned master pizza chef. Founder of Via Toledo Enopizzeria in Vienna, in the end of 2024 he opened a venue in Italy: Avenida Calò in Rome.
Born in 1986 in Oria, in the province of Brindisi, Francesco Calò comes from a family dedicated to baking. From a young age he breathed the white art in the parents' bakery, developing a deep passion for working with flour and leavened goods.
In 2008, eager to explore new avenues, he enlisted in the Italian Navy. In 2010, however, he returned home alongside his father with the goal of modernizing the business. Despite his efforts, the project was not as successful as hoped, prompting him to seek new opportunities abroad.
In 2013 he moved to Vienna with his partner Chiara Maggio. After gaining experience in several local pizzerias, in 2016 he managed to realize his entrepreneurial dream: on November 19th he opened the Via Toledo Enopizzeria. The restaurant quickly stood out for the high quality of its raw materials, so much so that it was ranked 2nd among the Best Pizzerias in Europe by the 50TopPizza 2020 edition, winning also the two special awards Performance of the Year 2020 - Di Martino Pasta Factory Award and Best Wine List 2020 - Consortium for the Protection of Prosecco Doc Award. In December 2024 he returned to Italy to open the Avenida Calò in Rome.
His ability to reinterpret pizza in a modern way without betraying the historical roots of the dish makes him a landmark figure for enthusiasts and professionals in the field.
