Mirko Rizzo is a leading figure in the Roman pizza scene. With a career dedicated to improving the crunchiness of the dough, he has founded and managed such successful establishments, today he is at the helm of L'Elementare, with several venues in the Italian Capital.
Born in Rome on October 26, 1980, Mirko Rizzo developed a passion for cooking at an early age, inspired by his mother's culinary skills. After an experience in the Navy, he decided to follow his true vocation: his debut was at Pommidoro in Centocelle, where he introduced the concept of quality pizza by the slice to the suburbs, proposing a product characterized by light dough and carefully selected ingredients.
In 2018, together with Jacopo Mercuro, he opened 180g Pizzeria Romana, with the aim of reviving the tradition of the so-called "low and crispy". The restaurant quickly gained recognition, distinguishing itself for the use of prefermenti and the hand-rolled dough, without the use of a rolling pin.
Later, Rizzo started the L'Elementare project, born in 2020 in Appio Park and later expanded with other locations in Trastevere, Tuscolano and Testaccio. The concept is based on simplicity: here the wheel becomes round, thin and "crunchy"; on the menu there is no shortage of fried classics. The success of the latter is evidenced by its rapid expansion and customer appreciation.
