Dabiz Muñoz is incredibly stepping back: DiverXo, Madrid's only three-Michelin-star restaurant, will not move to La Finca, at the luxurious Pozuelo de Alarcon leisure complex, due to the excessive cost of the operation. But the search for a new location is heating up.

The news
It was a project in grand style, that of DiverXo's relocation to a new venue surrounded by nature. An operation worth 14 million euros, enthusiastically announced by the great Spanish chef, several times a world number one, on his social platforms, "The new DiverXo has to be iconic, unique, disruptive, dreamlike, transgressive and unconstrained, creatively free and limitless."
According to rumors leaked to Madrid Fusion, the new site would feature 1,400 square meters of surface area among installations, outdoor spaces and parking at La Finca Grand Café, a luxurious leisure district located in Pozuelo de Alarcon. A gigantic facility serving just 40 covers, scheduled to open by 2025. The project, however, appears to have fallen through, according to Siete Canibales' account, which echoes an Instagram post.
"As you know, we had been working on the new DiverXo for a long time, with unlimited enthusiasm, investing an enormous amount of effort and resources. Today, I would like to inform you that after thoughtful consideration, I have decided not to continue with the announced project, a challenging but necessary decision", the chef announced again on June 21, who is already grappling with the farewell of sommelier Miguel Angel Millan after six years, best in the world according to The World 50 Best Restaurants in 2023.
This does not mean, however , that DiverXo will remain at its current location at the NH Collection hotel in Madrid. "As of today, we are already working on new options to make my dream come true, and as much as I know it is a tricky dream, I have faith that it will happen. Now more than ever, the best is yet to come. We have yet to show the best version of ourselves."
