In Graz, he was known as "Herr Ernst," a legend of Austrian dining room service. For forty years he served at the Landhauskeller in Schmiedgasse, but after reaching this milestone, retirement finally came.

At a time when the whole world seems to want to change jobs and the newspapers are filled with headlines about the "great resignation”, a waiter who enthusiastically stays in his place for forty years makes headlines. Sixty two-year-old Ernst Gschweitl, who has just celebrated his 40th work anniversary with a historic restaurant, the Lanhauskeller in Graz, says goodbye.

He was a little boy when he started wearing black as an apprentice in Teichalm, and then moved on to Café Hilmteich, in the Black Forest finally arrving in Graz, where he became a fixed member, while everything around him moved. Upon his arrival at the Country Cellar there were Sigrid and Michael Ranzmaier, then in the 90s it was the turn of Günther and Doris Huber, who in 2005 sold the business to the Aiola family of Judith and Gerald Schwarz.
The refined clientele served by Herr Ernst never changed, always with a smile on his face: the Real Madrid champions and the federal chancellors, but also the Dalai Lama and Arnold Schwarzenegger, who, he swears, is crazy about the sugared pancake with raisins, a rich crêpe "in pieces" sprinkled with icing sugar and blueberry jam or applesauce. In Graz they are still incredulous, and yet from the end of the year the only guests able to enjoy his performances will be his houseguests: after forty years the time has finally come to retire and enjoy his garden.
