La Taola: A 10 Seat Cabin Restaurant Run by Two Rising Chefs

A restaurant housed in a cabin, led by two young chefs who serve only 10 people at a time, La Taola provides a unique experience.

The story

Just under 50 years old, if you combine their ages together, and as many years in resourcefulness is the winning recipe for two young chefs who recently launched Taola.  Nicolò Avi and Mattia Putelli opened their new home restaurant in a mountain cabin, playing on the idea of being invited over to their house with a single table seating a maximum of ten people. But the chefs are also available to prepare banquets directly at home.


After a couple of months devoted to experimentation, the idea of the two chefs took off in a location loaded with memories for Nicolò: his grandparents' mountain cabin in Trentino, located on the slope leading to Vigolana, a hamlet of Frisanchi, near the Paludei refuge. Their cuisine is avowedly creative, and both are eager. Nicolò studied in Spain, while Mattia stayed at home and deepened his knowledge of local mountain traditions, specializing in researching native wild herbs.

Together they have started Slow Food Youth Network Trentino, a project that aims at the care and sustainable development of the area. But what does one eat when visiting these willing chefs? Their menu includes no more than a dozen dishes.


It opens with a variety of appetizing appetizers such as trout and alpine oyster with persimmon pulp; then, a tasting composed of 8 micro-ingredients in which celeriac is the star. Among the first courses, there are comforting offerings such as canederli (bread dumplings) in broth with a wild herb soup and Gnocchi d'alpeggio (a local style of gnocchi made with local cheese). The other dishes are a triumph of vegetables, with a final surprise: a rotating anti-waste course that surprises guests.
