Forget the clichés and the same old tired formulas of fine dining: the new frontier of haute cuisine speaks a bold, wild, and vibrant language. Leading the way is Hugh Allen, a prodigy of international gastronomy who, at just thirty-one years old, has captured the attention of critics worldwide thanks to Yiaga, an extraordinary culinary creation nestled in Melbourne’s lush Fitzroy Gardens, in the heart of Wurundjeri territory.

The echoes of its success are now heard around the world: Yiaga has in fact won the coveted Visa One to Watch award as part of The 50 Best Restaurants 2026, with the official ceremony set to take place on November 4 in Lima, Peru.

A Statement of Identity: Terracotta, Brass, and a Sensory Oasis

Stepping into Yiaga means embarking on an unparalleled tactile and aesthetic journey. Nothing in the restaurant evokes the architecture of classic temples of fine dining; every detail tells the story of the Australian landscape through the hands of its artisans,as highlighted by The 50 Best.

To bring his dream—four years in the making—to life, Allen enlisted the renowned architect John Wardle, who had never designed a restaurant before. The entrance welcomes guests by enveloping them in thousands of hand-molded terracotta tiles, whose curves evoke the fiery dunes of the Red Centre. Inside, the decor features black Tasmanian wood, brass accents, and durable leather finishes—the same leather used for the historic miners’ boots. Even some of the tableware was crafted from clay sourced from the grounds of the legendary Melbourne Cricket Ground.

Outside, too, the architecture harmonizes with its surroundings: while the centuries-old elm trees of Fitzroy Gardens evoke the European colonial legacy, native species such as banksia, callistemon, and the iconic “kangaroo paw” thrive around the restaurant’s windows.

Bush Food Bites and Botanical Mysticism: Green Ants and Eucalyptus Chocolates

The plate showcases a striking fusion of European technical precision, Asian influences, and local ingredients—often wild and sourced through a virtuous network of farmers, divers, fishermen, and foragers.

In a tasting menu of about 15 courses—one that’s constantly evolving—the chef breaks all the rules. Among the most iconic dishes isDavid Blackmore’s Wagyu (from retired cattle), served with steamed bread and green ants—a traditional bush food ingredient famous for delivering a tangy, citrusy burst upon the first bite. Also featured are raw Queensland prawns marinated in galangal, garlic, ginger, and mountain pepper, garnished with wild ginger petals.

But there’s no shortage of evocative sweetness either. Allen and co-chef Michael McAulay have created a signature dessert destined to go down in history: the “Gumnuts.” Starting with real eucalyptus nuts sent to an artisan in Bendigo to create custom silicone molds, the chef crafts chocolate shells that enclose unexpected pairings such as bee pollen and goat’s milk curd, strawberry gum with sheep’s milk yogurt, or caramelized white chocolate and acacia seeds.

Rounding out the experience is a beverage menu curated by Master Sommelier Dorian Guillon, who skillfully alternates alcoholic pairings—ranging from timeless classics to local gems—with signature non-alcoholic pairings crafted by the kitchen, featuring highlights such as local bitters, whiskey, mead, and exclusive collaborations with La Sirène Brewery.

Beyond the Kitchen: A Cultural and Inclusive Hub

Midway through the meal, the experience at Yiaga transforms into a guided tour. The chef or a member of the kitchen staff accompanies guests on a tour of the artisanal wine cellar, the wood-fired grills, and the First Nations artwork displayed throughout the restaurant, which is updated periodically.

Allen’s goal is to transform the restaurant into a gathering place for the creative community. Through the “Yiaga Sessions” series—launched by architect John Wardle with his lecture “Drawing The Many Strings Together”—the space hosts discussions involving artists, winemakers, chefs, and thinkers from various fields.

Who Is Hugh Allen: From His Debut at 16 to the Stars of Noma

Behind this vision lies a precocious yet solid talent. Born and raised in Melbourne, Hugh Allen picked up his first professional knives at just 16 as an apprentice with the Rockpool Group. Two years later, he joined the kitchen at Vue de Monde, the renowned restaurant on Melbourne’s 55th floor, where he honed his skills before winning the Gault Millau Young Chef of the Year award (2016) at age 20.

This recognition opened the doors to Europe’s top restaurants for him. He decided to move to Copenhagen to work alongside René Redzepi at Noma. During three intense years in the Danish capital, Allen was part of the original Noma team, joined the brigades for international pop-ups in Australia (Sydney, 2016) and Mexico (2018), and eventually became part of the opening team for Noma 2.0. It was here that he learned the secrets of fermentation, foraging, and the extreme celebration of native cultures.

Upon returning to his homeland at the end of 2018, he became Executive Chef at Vue de Monde at just 23 years old. In 2021, he achieved the historic milestone of earning three hats (Three Hats) in the Good Food Guide, becoming the youngest chef ever to receive them. A strong advocate for the environment, in 2024 he also joined the global 1% for the Planet movement, donating 1% of his personal income to environmental organizations.

In 2025, he finally launched Yiaga. Within a few months, his new venture earned three hats, making Allen the first chef in Australian history to simultaneously lead two three-hat restaurants.

Today, with international recognition from The World’s 50 Best Restaurants, Hugh Allen continues to show the world that Australian cuisine is not just about good coffee or excellent pastries: it is a dynamic, sophisticated, and above all, irresistibly fun universe.
