In Refshaleøen, Copenhagen’s industrial district, an old shipyard is now home to the Alchemist, Rasmus Munk’s €15 million project, which has also set records for its waiting list.
Alchemist: The Rasmus Munk Phenomenon and the Two-Million-Name Waiting List
Despite a tasting menu that defies the conventions of traditional dining, the restaurant has sparked an unprecedented global phenomenon: a waiting list of approximately two million people, as the chef recently revealed in a Spotify podcast (see the statement on Rolling Pin here). According to Munk, the success stems not only from culinary technique but also from the narrative content: “If you have a story to tell, people will book,” explains the chef, emphasizing how today’s audience seeks meaning that goes beyond simply consuming a haute cuisine meal.

From haute cuisine to social impact
The turning point in Munk’s career came after volunteering at a Christmas party for families in need. At the time, Munk was head chef at the Michelin-starred restaurant TreeTop; he decided to resign the very next day to devote himself to a style of cooking he describes as “holistic”—one capable of blending gastronomy with socio-political messages. The current version of Alchemist, which opened in 2019, reflects this vision. The restaurant—as openly stated on its website—is not suitable for business dinners or first dates (unlike many other fine-dining establishments), but offers an immersive experience divided into five acts, requiring diners to commit to a roughly six-hour meal.

The Structure of the Experience: 50 “Impressions”
The tasting menu consists of 50 courses, described by the staff as “impressions.” The experience is not linear and relies on a complex technological and artistic infrastructure:
- The Overture: The dinner begins in the dark, accompanied by the violin of a musician from the Copenhagen Philharmonic.
- The setting: Many courses are served under a planetarium dome with video projections and ambient music.
Signature dishes: Among the offerings are Greed (a taste of frozen air infused with forest aromas), the Smokey Ball (inspired by Indian pani puri with scampi tartare), and the “Big Brother” eye made with butternut squash cream.

Reservations and the Market
Securing a table at Alchemist is no easy feat. Reservations open every three months, and available seats sell out within minutes. The “ticket” system and the extremely long waiting list reflect a paradigm shift in the fine dining sector: contemporary luxury seems to lie in the ability to transform a dinner into a vehicle for philosophical and artistic reflection.
