Sustainability with suppliers, thanks to a direct collaboration with local producers who share the same philosophy of quality and respect for the environment.

“For me, being sustainable means working with the freshest and selected products, helping small suppliers who follow environmentally friendly production methods,” says the chef. This commitment translates into an approach that reduces environmental impact by shortening the food supply chain and enhancing local excellence. Among the suppliers that contribute to the quality of the Km30 Menu we find realities of excellence such as Caseificio Carena, Molino Pagani, Ceramiche Martina Geroni, Società Agricola Giuseppe Colombo, Macelleria Pagani, and many others. Collaborations that guarantee products of the highest quality, respecting seasonality and territory.

Education and training: investing in the future
For the past six months or so, Proietti Refrigeri has been collaborating with local hotel and cooking schools, offering students the opportunity for training internships directly at the restaurant. This initiative not only promotes hands-on learning, but also conveys the importance of sustainable and locally linked cuisine.
The dishes
The tasting offers a sensory experience ranging from the delicacy of local cheeses to the intense flavors of fresh produce such as eel, to dishes that combine flavors and ingredients in surprising ways. Each course is a synthesis of tradition and modernity, where the chef's creativity is combined with the authenticity of local products. Among the most popular dishes we find the duck foie gras in terrine with orange, apple with Grand Marnier, cocoa grue and milk pan brioche, a perfect balance between sweetness and intensity. The risotto with acid reduction, roasted eel, sake and white onion tincture, which combines freshness and spicy notes in a harmonious combination.


The veal in two services, which plays with the contrast between the softness of the sweetbread and the richness of the kidney, enriched with a touch of dark chocolate. Capon ravioli with saffron, parsnip and savory, a delicate and aromatic dish that celebrates the flavors of tradition. The lamb with tenderloin and prosciutto, accompanied by Pannerone, turnip greens, hazelnuts and bergamot, a perfect blend of rusticity and sophistication.

Turnips, roots and vegetables, a composition that explores textures and flavors, paying homage to the freshness of the earth. Hops, rye and cashews, a surprising dessert that closes the journey with creativity and originality.
