Agostino Perrone, nicknamed the “Martini Pope,” has as many as 30 signature cocktails on his menu, but that is not what makes him special in the mixology world. The bartender and director of London's award-winning Connaught Bar, his sole focus is to ensure a level-headed welcome through a professional yet friendly approach. A smile is the tool he uses in front of his guests; if it were to be missing, there would be no point in starting the acrobatic show.

Agostino Perrone is one of the world's most creative and celebrated bartenders, as well as the director of London's Connaught Bar located inside the five-star hotel of the same name (in the Mayfair district).
The latter, designed by David Collins Studio, has an original feel: glitzy details and neutral colors make it a tribute to industrial and technological progress, typical of Art Deco. The ambiance, though modern, is sophisticated, it may be because of the sparkling crystal glasses, stained glass windows, emerald green leather armchairs, polished mirrors or the imposing, dark bar. Under the unique and wise leadership of the mixology master, the bar has achieved incredible milestones: it is currently fifth in The World's 50 Best Bars 2024. "Receiving awards is nothing but a reward for the hard work we put in on a daily basis. They encourage us to pursue the goal, which is to satisfy our guests 100 percent,” the Como native confides to Rolling Pin.
He continues , “Whenever we deal with customers, we aim to convey our deep love for the art of hospitality and the passion that enlightens us. 'Proceed in style and don't forget to smile', this is the motto that accompanies us during scenic execution. More than techniques one should focus on hospitality. We all have different tastes and backgrounds, and although we would like to share our cocktails, we know that what makes the work special is dedication to the guest experience and consistency.".
At Connaught, the Martini is a house specialty; in fact, it is made on a special cart directly at the table of the person who ordered it, and everyone can choose which essence to use to enhance the flavor. In this regard, Perrone recalls when 15 years ago he saw Pierce Brosnan in front of him: "I told him I had made him one with gin, Italian vermouth, lemon twist and lavender bitters. And I added 'I didn't stir it, I shook it!', just as he did in the 007 movie". Memorable and significant anecdote, since the Irish-born actor is the interpreter of James Bond, the secret agent who made the iconic drink famous with the phrase “Shaken, not stirred”. Since that moment-legendary-many wish to repeat the symbolic ritual: Brosnan himself returned months later with the same request.
