Awarded as the best Green Star Michelin restaurant, Finca Alfoliz preserves the rural and gastronomic traditions of Huelva, projecting them into a friendly future. Xanty Elias opened it in the family home following the closure of Acanthum in the midst of the pandemic. "Because after thirty years of a career, I crave simplicity."
The story
It's easy to talk about sustainability, but few truly embrace it on a deep and personal level. In this regard, the project of Finca Alfoliz stands out, located in what was once a family home in Huelva, as explained by La Razón. "And for me, it's a challenge to transform this historical legacy into a completely sustainable project," claims chef Xanty Elías, who, after the closure of Acanthum in the middle of the pandemic, wanted to celebrate nature and life. "Because after thirty years of a career, one begins to appreciate the simpler and more natural things."
In total, there are 10,000 square meters, mostly green, which have earned the Green Michelin Star. The large permaculture vegetable garden is filled with energy, supplying the kitchen with succulent vegetables. Vegetables are the stars of the cuisine, honored as much as other ingredients, with the goal that "people are happy when they savor these traditional flavors that have been somewhat forgotten due to the internationalization of cuisine." Everything is strictly seasonal, following the rhythms of nature and the spirit of the land.
Composting is managed through a vermicomposting system, completing an harmonious cycle. The education of the younger generation is facilitated through the Prenauta Foundation, which teaches children the Mediterranean diet, fighting the spread of obesity. "We feel the responsibility to give back to nature and society everything we use," Elías emphasizes convincingly.
In fact, Finca is more than just a restaurant, and the experience extends beyond the meal alone. Here, the essence of the past merges with a fully contemporary vision of the region, extending to the cellar with the most significant wines of the Huelva region for an immersive and rejuvenating stay.
