Upon reopening, Bellin said he had rediscovered his enthusiasm, rebuilt his team, and reimagined how he approaches his work. What makes this story even more significant is the value that the Auberge des Glazicks holds for French gastronomy. What is now one of Brittany’s most prestigious restaurants began as an old family inn, run first by the chef’s grandmother and then by his mother, before becoming—under Bellin’s leadership—a restaurant awarded two Michelin stars.

After gaining experience working alongside chefs such as Joël Robuchon and Jacques Thorel, Bellin has developed a culinary style deeply rooted in the Breton region, based on a continuous dialogue between land and sea and on signature ingredients like buckwheat. Over the years, this approach has transformed Plomodiern into a gastronomic destination well beyond the region’s borders. The question today is primarily about the future. At 54, after more than twenty years spent running his restaurant at the highest level, Bellin could choose different paths: continue with the same model, reduce the number of service days, rethink the restaurant, or simply take the time he needs to recharge.
