The Cuisine
We begin with a small seafood appetizer featuring a gently seared octopus, tender at the core, lightly charred, and nestled on a bed of shredded fresh burrata, accompanied by sun-dried tomatoes and a fennel bread crumble. An appetizer that plays on precise contrasts: savory, creamy, and crunchy. Refined without being aloof. Then comes the skillet, bringing with it a delicious and unexpected treat. The sourdough bread, tall, soft, and with an almost intoxicating aroma, holds a marinated yellowtail, peaches preserved in syrup and pan-seared in butter, a delicate lemon ricotta, and a teriyaki sauce that elegantly ties it all together. A bite you don’t expect—and one you’ll find hard to forget.



The beetroot gnocchi arrive with a delicate, pleasant aroma. Their color is that of a purple sunset, and their texture is incredibly light. They are enveloped in a generous fondue of Bitto, Brie, Gorgonzola, and Parmigiano Reggiano, topped with toasted hazelnuts and a gentle hint of thyme. Creamy and rich, they are best savored slowly, perhaps at the end of the meal with a piece of bread to mop up the sauce.

To finish, Iberian suckling pig pluma: a prized cut, cooked with the precision it deserves, served with Jerusalem artichokes that alternate between creamy and crunchy textures, and fresh red onion petals—it is tender, sweet, and almost silky. A generous, indulgent finale without excess, that leaves the palate with a warm aftertaste.
