The Biography

Pablo Rivero was born in 1978, in Buenos Aires, Argentina. Fascinated by his family's rich culinary traditions, Rivero dedicated himself to the study of wine, completing his education at the Escuela Argentina de Sommeliers. Here, he refined his tasting skills and developed an in-depth knowledge of both local and international wines.

After gaining experience in various wineries and restaurants in Argentina, Rivero had a significant formative opportunity at Bodega Catena Zapata, where he deepened his understanding of winemaking techniques and the selection of high-quality wines. This experience enriched his appreciation of the nuances of Argentine wine.

In 1999, Pablo Rivero founded Don Julio, a restaurant aimed at celebrating traditional Argentine parrilla with a high-level wine offering. The wine list at Don Julio, personally curated by Rivero, quickly became renowned for its excellent selection, ranging from local wines to rare international varieties.

Rivero is committed to elevating the profile of Argentine wine, promoting small producers, and introducing innovative varieties to the market. His efforts have led Don Julio to receive numerous accolades, including a recent prestigious distinction: Pablo Rivero was named Beronia World’s Best Sommelier 2024 by The World's 50 Best Restaurants, a title that attests to his mastery and impact in the industry.

In addition to running Don Julio, Rivero actively participates in conferences and seminars, where he shares his passion and knowledge with other wine enthusiasts. He has also contributed to various articles and publications, becoming an authoritative voice in contemporary wine discourse.
