Matteo Fiorenzo is a young sommelier who stands out for his unique approach to wine, made up of passion, study and creativity. With a training that combines practical and academic experience, he has transformed the Butterfly's wine list into a sensory journey, where each label tells a story and complements chef Fabrizio Girasoli's gastronomic experience.

Matteo Fiorenzo began his adventure in the world of gastronomy at the age of 16. One of his most formative experiences was an internship at a restaurant on the beach in Lacona, Capoliveri (Elba Island). After graduating, he continued to explore the sector by working as a barman at the Cascina di Montecatini. However, it is the discovery of the world of wine that marks a turning point in his career: in 2017 he starts the AIS (Italian Sommelier Association) course, which he successfully completes in May 2019.

The real opportunity came in 2022, when the Michelin-starred chef Fabrizio Girasoli offered him a job at the Butterfly Restaurant. Matteo accepts the challenge and begins to build a wine list that explores the best of Italian and foreign wine traditions, while maintaining strong ties with local producers.

His philosophy is based on curiosity and respect for the diversity of the wine scene. Matteo believes that beverage should be accessible to all, but also capable of evoking deep emotions through carefully crafted pairings. His aim is to create a complete sensory experience, where each glass enhances the flavours of the chef's signature dishes.

In addition to his work in the dining room, he devotes himself to continuous training, visiting wineries to learn about new labels and deepen his production techniques. His dedication and commitment have made the Butterfly a destination not only for auteur cuisine, but also for lovers of fine drinking.
