Nacho Manzano, a chef from Asturias, runs Casa Marcial, a restaurant that has been awarded three Michelin stars. Here he has reinterpreted the local culinary tradition through innovative techniques and a deep connection to the land.
Born in 1971 in La Salgar, Nacho Manzano began working in his family's restaurant, developing a deep connection with the flavors and traditions of his homeland. In 1993, he transformed Casa Marcial, once a simple inn, into one of the most acclaimed restaurants in Spain. The first recognition came in 1999 with the first Michelin star, followed by the second in 2009. In 2024, he culminated with his third star, establishing himself as an international excellence.
Nacho has expanded his activities with La Salgar in Gijón, also awarded a Michelin star, and Gloria in Oviedo and Gijón, places that are more accessible but equally rooted in Asturian culture. He is also the gastronomic director of Ibérica Restaurants, a chain present in some of the most important cities in the United Kingdom.
His cuisine is a tribute to the land and the dishes enhance local ingredients: his vision is not limited to the product, but includes a sustainable and environmentally friendly approach. Manzano actively works with area producers, improving the short supply chain and promoting the Asturias. This earned him the green star.
His efforts have earned him numerous awards, including the Premio Nacional de Gastronomía al Mejor Jefe de Cocina in 2021.
