Noelia Tomoshige is a well-known pastry chef of the contemporary scene. She founded Monroebakes, where French technique is influenced by her Japanese origins and Spanish culture, her country of birth.

Noelia Tomoshige was born in Seville in 1990 to Japanese parents who specialized in flamenco, a cultural combination that has deeply influenced her life and creative vision. After a decade of working in the luxury sector, she decided to follow her passion and trained at the prestigious Le Cordon Bleu school in Madrid, where she learned the basics of classic French pastry.

In 2021, she opened Monroebakes in Getafe, an establishment that reflects her multicultural roots. Here she offers light and refined desserts, characterized by low sugar content and a minimalist aesthetic. Her offerings are distinguished by the harmony between French techniques and Japanese and Spanish flavors, with creations such as matcha tea mousse, yuzu tartlets and reinterpretations of classics such as Santiago cake.

Thanks to her innovative vision and the quality of her works of art, Noelia was awarded the title of Revelation Pastry Chef at the prestigious Madrid Fusión Gastronomic Congress in 2023, a title that establishes her among the emerging talents of the Spanish gastronomic scene. Her philosophy is based on the ability to excite through taste, realizing desserts that tell the story of her life experience and origins.  She was also chosen as talent of the year 2024 by La Liste.

In addition to running Monroebakes, she is dedicated to education, offering workshops and classes. Her dedication and talent make her a leader in the industry as she is able to positively influence the next generation.
