Arnaud Lallement runs the iconic L'Assiette Champenoise restaurant in Tinqueux, near Reims. After receiving his third Michelin star in 2014, he is now one of the most celebrated French chefs in the world. Inspired by his father and the great masters of gastronomy, he has always maintained a refined style that celebrates his roots.

Born in Reims in 1974, Arnaud Lallement's passion for cooking began at an early age, inspired by his father, Jean-Pierre, who ran a starred restaurant in Châlons-sur-Vesle. Wanting to pursue his passion at home, he trained at the école hôtelière in Strasbourg, working alongside renowned chefs such as Roger Vergé, Michel Guérard and Alain Chapel.
In 1997, he joined the team of the family business, L'Assiette Champenoise in Tinqueux. In 2000, Arnaud took over as director and the following year he regained the first Michelin star that had been lost in previous years. Thanks to his leadership, the restaurant received its second star in 2005 and became a member of the Association des Grandes Tables du Monde.
In 2013, he was named Chef of the Year by the Gault & Millau guide, an accolade that was a prelude to the award of his third Michelin star in 2014, an achievement he dedicated to his parents, who had died some time before. His offerings are distinguished by the quality of his creations, such as the iconic Blue Lobster, a tribute to his native Champagne region.
