Alfio Nicolosi is a young Italian chef who founded and runs the Sui Generis restaurant in Saronno. In just 9 months since opening in February 2023, the restaurant has been awarded its first Michelin star for its innovative cuisine that combines sustainability, contemporary techniques and global influences.
Born in 1990, Alfio Nicolosi initially studied organizational science, but his passion for cooking led him to pursue a career in the culinary world. He gained significant experience working with renowned chefs such as Giuseppe Iannotti at Krèsios and as executive chef at Tenuta de l'Annunziata on Lake Como.
In February 2023, Nicolosi opened Sui Generis in Saronno, located in a former cotton mill. The restaurant, with only 18 seats, offers a dining experience based on tasting itineraries that change according to the season and availability of ingredients. The menus, such as Ianus and Neptunus, reflect the chef's philosophy of creating dishes that surprise and engage guests, including a "surprise" menu where diners discover the courses only at the time of service.
Nicolosi's cuisine is characterized by the use of local and sustainable raw materials, with a focus on reducing waste. It integrates ingredients and culinary techniques from different cultures.
Thanks to this innovative approach, Sui Generis received its first Michelin star in November 2023, establishing itself as one of the most exciting new dining destinations in the Milan area.
