Alessandro Negrini e Fabio Pisani

Italia - Caspoggio e Molfetta

A Negrini e F Pisani

One born in the Lombard valleys and the other on the Puglian coast, Alessandro Negrini and Fabio Pisani have combined their knowledge and talent in the cuisine of "Luogo di Aimo e Nadia." The Milanese restaurant welcomed them in 2005, witnessed them growing, and regaining the second MICHELIN Star it had lost. The two friends and colleagues work with incredible synergy, using excellent ingredients and presenting their dishes in a unique way, enriching them with cultural references.

Alessandro Negrini was born in 1978 and, growing up amidst the green meadows and alpine pastures of picturesque Valtellina, food has always been an important aspect of his life.

His passion for cooking matured over time, especially after his experience at the renowned "Palace" in Saint Moritz, where he transitioned from the familiar environment of Caspoggio in Valmalenco to become part of a team of 50 chefs. His desire to grow led him to "Gallia Palace" in Punta Ala and later to the prestigious "Il Luogo di Aimo e Nadia." He spent three years here before continuing his training at "Domaine de Châteauvieux" in Geneva and the renowned restaurant "Dal Pescatore" in Canneto sull'Oglio. It was here that he met Fabio Pisani, who has since become a dear friend and irreplaceable collaborator. In 2005, driven by a strong vision, Alessandro and Fabio returned to "Luogo di Aimo e Nadia," eager to bring to life an ambitious project to shape the future of the restaurant's new generation, together with Stefania Moroni, Aimo, and Nadia's daughter.

Fabio Pisani was also born in 1978, but in the South of the peninsula, in Molfetta, in the province of Bari. He was introduced to the world of cooking at the young age of 14 by his skilled chef uncle, who took him to a restaurant in France, where young Fabio developed a passion for the dynamism of professional cuisine. After graduating from a hotel school, he worked in prestigious European restaurants such as "Grand Vefour" in Paris, "Waterside Inn" in London, and the famous "Dal Pescatore" in Canneto sull'Oglio, where he met Alessandro. Alessandro then brought him to "Luogo di Aimo e Nadia," where Fabio fell in love with the simplicity of the dishes, and in 2005, the two started working at the restaurant, carrying with them the passion they still infuse into every dish today.

The true protagonists have always been, naturally, Aimo and Nadia Moroni, wise masters who, over time, trained young talents Fabio and Alessandro, who gradually grew more confident in the couple's cuisine. The two chefs gained the trust of their masters until they allowed them to express their creativity independently.

The combination of the talent of the two chefs, with their distant origins, deep knowledge of products, and close proximity to suppliers, allows Fabio and Alessandro to reinterpret the authentic flavors of all of Italy in a more modern way. This synergy brought back the second MICHELIN Star lost in 2003, as a reward for excellence and valorization of ingredients, presented uniquely and enriched with cultural references.

In 2022, "Luogo di Aimo e Nadia" celebrated its 60 years of activity, but in addition to the starred restaurant, there are also "Bistrò Aimo e Nadia" and "Vòce," all located in Milan.
