Constant emergencies got in their way, but eventually, the very young Sam Yorke and Tomas Gormley, both under 30, were crowned with a MICHELIN Star. After various vicissitudes between covid and pop-ups, they set up home in Heron.

Michelin is for the young, and not just in Italy. Among the recently broken records is that of Scotland's youngest-starred chef. He is Sam Yorke, a 25-year-old native of Rochdale who runs the Heron restaurant in Edinburgh with 28-year-old Tomas Gormley.
Yorke attended Edinburgh New Town Cooking School before moving on to chef Dominic Jack's Castle Terrace, where in two years, he climbed the organizational chart from commis to kitchen second. He recognizes him as his mentor, thanking him for passing on the fundamentals of proper cooking based on classic techniques and attention to details. Unfortunately, however, the restaurant closed due to pandemic bottlenecks, and today is slated for conversion to apartments.
The partnership with Gormley, whom they met when they were both in the brigade at Seasons, which also closed, began during covid when they set up a take-out pop-up called Bad Seeds, which sold out every weekend. Then, in 2021, they opened Heron, where from the beginning, they concerted a farm-to-table experience, organized around two highly different tasting menus that change every few weeks, in addition to an a la carte. What goes on stage is the excellence of Scottish produce, wild fish and seafood, game and meats from certified breeds, and seasonal organic vegetables and fruits.

It is an indisputable testament to the maniacal attention and dedication of the entire team, without which we would never have gotten where we are now"
