Karne Garibaldi: From Mexico, the World’s Fastest Restaurant Service

13.5 seconds. Stopwatch in hand, that's how long it takes the servers at Karne Garibaldi Santa Tere to bring customers their dishes. Here’s how they are so quick.

How many times have you sat at a restaurant table and waited too long for your order to come out? Rest assured that in this restaurant, such a thing will never happen because the time between ordering and the plate materializing before your eyes is just 13.5 seconds—a record-breaking time.


We are in Guadalajara, Mexico, to visit the Karne Garibaldi Santa Tere, a real "fast food" restaurant serving dishes at a Guinness World Record speed. Since 1996, the restaurant has held the record for the fastest service in the world.


The restaurant has been open since 1970, beginning as a small kiosk offering customers Mexican specialties. The speed of operations in the kitchen is mainly because they have only one main dish besides the usual appetizers on the menu. Carne en su sugo (meat in its own sauce) is a beef stew accompanied by bacon, onion, cilantro, lemon, and beans that is typical of Guadalajara. However, there is no shortage of desserts such as jericalla (Mexican custard) made with milk, sugar, and cinnamon, or horchata, a traditional rice drink.



"Initially, it all started as a game between waiters competing to see who could serve customers the fastest. Soon after, however, it became almost a mission until we got the Guinness World Record," says the manager of one of Karne Garibaldi's restaurants.


"We train our staff to learn how to be efficient," Laura Mariaud of Karne Garibaldi explains. "There is a food preparation process that allows the work to flow quickly. That´s how our service turns into a chain of synchronized operations that allows waiters to bring steaming dishes to the table in seconds." Ironically, since the restaurant has become known for its speed in serving customers, the wait to sit at tables has increased!
