Mirko Febbrile, Former Starred Chef Cooks Italian Comfort Food at a Food Stand in Singapore

Former Braci chef Mirko Febbrile is momentarily devoting himself to a more modest project: for a month, he will cook pasta and Italian dishes at a food stand in Singapore.

The story

Mirko Febbrile, the former star chef at Braci, is now (temporarilty) a street vendor in Singapore. The 31-year-old chef of Puglian descent, who has been working in the Asian city for no less than seven years and is already well-versed in the local food culture, took over the reins of the pop-up Nudedles.4 together with Clarence Chooi, a local street vendor, on Aug. 17. Febbrile's adventure will last for a month. He chose to embark on this project, which is entirely different from those he has undertaken so far, because of his desire to put himself out there in a new way.

The idea is to take off the shoes of a starred chef and put on those of a cook who exalts genuine products, but in a simple way, with low prices. What, then, are the dishes that can be tasted for a month in Febbrile's pop-up? Pasta, burrata ice cream, tomato cavatelli and ricotta, and so on, with the leitmotif of Puglian gastronomic excellence.

"Everything will be made as if we were in a restaurant. We want to make quality pasta an affordable product," he said. "I don't want people to think that Italian food should necessarily be enjoyed somewhere fancy. It's still simple, comfort food, full of love. I think it's important to give everyone a chance to try it without spending a fortune. And this is just a way of thanking Singapore for being so welcoming over the past seven years; it has become my home."
