Dabiz Muñoz Receives MICHELIN Star in Six Months: New Record for Ravioxo

Dabiz Muñoz received a surprise first star for RavioXO, a restaurant devoted to dumplings with Italian influence, where you can spend as little as 30 euros.

No one expected this, not even Dabiz Muñoz. Six months earlier, he opened RavioXO, a restaurant devoted to dumplings to complement StreetXO's street food. Recently awarded the world's best chef by The Best Chef (and for the second time) during the Toledo celebration, the Madrid native didn't simply acknowledge the confirmation for DiverXO's third star but gained a new one.


The news is unprecedented, considering that DiverXO is the most expensive restaurant in Spain (tasting costs 365 euros, a figure already at the center of controversy due to the chef's remarks about the sustainability of catering and the threshold of wealth). RavioXO boasts more than affordable prices: a total meal requires only about 30 euros. A price that would rather suggest a Bib gourmand.


It is, for all intents and purposes, a concept restaurant centered on dumplings, but they are influenced by Italian and other cuisines in an avant-garde way. "Each piece represents hours and hours of work," the chef claimed, pointing out how the universe of Asian dumplings had already been at the center of DiverXO's creativity for some 15 years and how research on the subject continues. Nothing is left to chance: each filling has its own dough, and each dough has its own filling. The marriage of taste and attention to detail are those of a Three Michelin Starred champion.


This is the official motivation: "In the words of chef Dabiz Muñoz, RavioXO represents 'the luxury of mealtime,' the perfect metaphor to express his informal, artisanal cuisine, centered entirely on the world of dough. All doughs, fillings and sauces are individually prepared using the best ingredients. In this expansive restaurant, located near the gourmet area of El Corte Inglés on Paseo de la Castellana, the elegant furnishings are inspired by Lazaro Rosa-Violan; they set the stage for Chef Balo Ortiz, who follows the guidelines of acclaimed Madrid chef Dabiz Muñoz in every dish.”


“The exclusively a la carte cuisine features choices that always include some type of pasta, from superb and innovative dumplings to some of Diver-XO's most celebrated signatures." The Madrid chef was brief in his comment on social media, "Super team. Unbelievable. From today we work for the second star."
