El Morenito, the Award-Winning 4,000 Portion Soup

The soup that conquered the Peruvian people: made by chef Leandro Gutiérrez, El Morenito has a very interesting story.

What is El Morenito? This is Peru's most famous dish: a steaming soup made with meat and vegetables that chef Leandro Gutierrez created for his people. The country is now included among the most interesting gastronomic destinations in the world and this dish, prepared with strictly local ingredients, best represents its culinary tradition. Gutiérrez sautés the preparation in a really huge pan: 3 meters in diameter for 4,000 portions of Peruvian pleasure, to be served to the crowd during events and celebrations around the country.


But how did the idea come about? It was 2017 when the chef perfected the dish, after knocking on the doors of residents in Moreno to personally learn which ingredients and flavors were preferred by his fellow citizens. Since then, it has been prepared at least 300 times and Gutierrez does not hide his joy about winning the prize for the best local specialty, awarded to him by the magazine Miradas de Perù. “It is an immense emotion, a prize for the project and for my city.”


During the ceremony, the chef recreated his recipe for the members of the jury, winning everyone's favor: the new project will be to bring El Morenito around the restaurants of different cities, to keep alive the Peruvian tradition. Last October, 5 years after the award ceremony, the municipality also decided to honor the chef with a dedicated celebration. For the event, a stew was prepared for everyone with 400 kilos of vegetables, 150 of meat, 70 of rice and 19 of salt, as well as 70 liters of tomato purée, 1,600 liters of water and an enormous quantity of different spices.


“My family is from Moreno; my grandfather was a mechanic, and my father was a butcher. Winning a gastronomic award with a dish representing my home is incredible.”
