Biography

Riccardo Vergine, along with his brother Matteo, transformed an ancient Brianza inn into a restaurant exemplifying sustainable gastronomy, recognized with the Michelin green star. His career in the restaurant industry began with a deep love for food and the art of hospitality, inherited and cultivated in his family.

Riccardo, with his training as a sommelier, brings to Grow a deep knowledge of wine and a passion for sourcing the best local products. His ability to create a welcoming and refined atmosphere is reflected in every detail of the restaurant, from the wine selection to the care with which he welcomes each guest. Riccardo firmly believes that the dining experience begins well before the first taste and is committed to making Grow a place where diners can feel part of a unique culinary story, celebrating the richness and diversity of Lombardy. Under his guidance, Grow has established itself as a model of excellence in hospitality, where sustainability is not just a buzzword but a daily practice.

Riccardo and Matteo have chosen to focus on game and local products, excluding farmed animals from their menu, a decision that demonstrates their commitment to an ethical and environmentally respectful approach. Riccardo's vision extends beyond the restaurant's dining room. He is actively involved in managing the family garden and selecting products, ensuring that every ingredient reflects the high standards of quality and freshness that Grow promises its guests.
