Biography

Mariella Organi, beginning her career in the restaurant world in November 1991, has charted a path of significant success and recognition. Since becoming an AIS sommelier in 1994, the same year she married Moreno Cedroni, the couple has elevated La Madonnina del Pescatore, achieving its first Michelin star in 1995, followed by a second in 2006.

Recognized as the Best Woman in the Room by Identità Golose in 2016, Organi has continued to make her mark in the industry, becoming a member of the scientific council of ALMA International School of Italian Cuisine in Colorno and an Emeritus Ambassador for the Italian Association of Taste Ambassadors in 2017. Her commitment and dedication were further celebrated in 2021 with the Gambero Rosso award for Best Dining Room Service and in 2022 as Maitre of the Year by L'Espresso.

As the restaurant manager, Organi oversees a team of about ten people, focusing on balancing diverse personalities to create an authentic and welcoming atmosphere for guests. She fondly recalls the arrival of the first Michelin recognition in 1995 and her first great mentors, including three women protagonists of the 90s: Livia Iaccarino, Renata Fugazzi, and Emanuela Pierangelini, as well as Antonio Santini and Cristiana Romito. Her philosophy is based on commitment, routine, and consistency, recognizing the importance of emotional charge in her work.

Her approach to managing the dining room focuses on respecting the different personalities in her team and creating authentic relationships with guests. Organi believes that even the most shy or introverted individuals can play a significant role, contributing to an atmosphere of harmony and serenity.

She was included in the "Femmes en vue" program by Les Grandes Tables du Monde, which celebrated her story as a successful woman in the world of gastronomy.
