Born in Mantua in 1983, Alberto is the son of Antonio and Nadia Santini, who were awarded the title of Best Chef in the World in '98 with the Grand Prix de l'Art de la Cuisine. Alongside his older brother Giovanni, a highly talented chef who works alongside their mother in the kitchen, Alberto represents the legacy of one of the most important families in the Italian restaurant industry.
The Santini family is the founder of the renowned restaurant "Dal Pescatore," a true institution that still upholds values of respect and authenticity. This restaurant, created in 1925 by their fisherman grandfather and their grandmother, who returned from Brazil, became a Relais Gourmand of Relais & Châteaux in 1990 and has maintained Three MICHELIN Stars since 1996. Being part of this reality has always been a source of great pride for Alberto.
After completing his marketing studies at the University of Parma, he joined his parents' restaurant and became its sommelier in 2013, taking over from Hayashi Mototsugu, the previous sommelier, in managing the wine cellar and the wine list.

In 2022, he won the Premio Le Soste Ospitalità di Sala 2022.
