Roman bartender and creative force behind Acquaroof Terrazza Molinari and the two-Michelin-starred Acquolina restaurant, Alessio Grimaldi turns mixology into a sensory narrative inspired by the Mediterranean — where technical precision meets aesthetic sensitivity and the flavors of the sea.
Trained behind the bars and under the soft lights of some of Rome’s finest cocktail venues, Alessio Grimaldi has honed his craft like a true artisan of taste. His work blends discipline and creativity, transforming each drink into a story where flavor becomes emotion.
In 2020, he joined The First Arte Hotel in Rome, one of the city’s most elegant addresses, and found his ideal home at Acquaroof Terrazza Molinari. Overlooking the rooftops of the Eternal City, Grimaldi redefines the concept of the hotel bar — refined yet approachable, intimate yet luminous.
His signature drink list is a constant dialogue between tradition and innovation. Classic cocktails are re-imagined through modern techniques, refined infusions, and carefully sourced ingredients. Each drink is designed to complement the cuisine, enhance its flavors, and evoke a memory, a place, or a feeling.
At the same time, Grimaldi curates the cocktail list at Acquolina, the restaurant awarded two Michelin Stars, working closely with chef Daniele Lippi. Together they share a Mediterranean vision that transcends geography — a living soul shaped by cultures, aromas, and shared heritage.
His signature cocktails are liquid tributes to the Mare Nostrum: citrus zest, wild herbs, salt, and sea breeze weave through each glass like notes in a melody. Behind every creation lies the belief that simplicity can be poetic — that a sip can recall a journey or a shared memory.
In every cocktail by Alessio Grimaldi, technical mastery meets creative freedom: memory turns into flavor, and the light of the Mediterranean glows within the glass.
