Born in Venezuela and raised in Liguria, Giovanni Allario (b. 1991) became Bar Director of Moebius in Milan in 2022, after formative years in Paris working among the world’s top bars. His philosophy blends culinary technique, Italian ingredients, and an experimental spirit.

Giovanni Allario was born in Caracas, Venezuela, in 1991 and moved to Genoa, Italy, as a child. He initially studied industrial design before realizing his true calling lay in hospitality and mixology. His first job in the restaurant world was at La Lanterna in Genoa, where he began learning the essentials of service and bar management.

He later moved to Paris, where he spent about six years refining his craft in high-end bars and took part in the opening of Danico, one of the city’s most acclaimed cocktail venues. He went on to become Bar Director at Le Syndicat, a leading Paris bar frequently listed among The World’s 50 Best Bars

In 2022, Allario returned to Italy to lead the bar program at Moebius in Milan—a hybrid concept that merges mixology, gastronomy, and design. His approach centers on reinterpreting classic cocktails through the use of Italian ingredients and culinary techniques, with a strong focus on sensory and visual storytelling. 

Beyond his work behind the counter, Allario co-founded SETE, a cocktail and communication consulting company, with colleague Julie Couder. Their goal is to “democratize mixology” by supporting bars, brands, and cocktail culture through education and creative consulting. 

His cocktail philosophy emphasizes the Mediterranean palette—highlighting Italian produce, culinary precision, and gastronomic textures.

Allario’s human side emerges through his migration story, the decision to leave his initial studies to follow his passion, and his entrepreneurial spirit during the pandemic when SETE was born. His journey reflects resilience and a desire to share knowledge within the international bar community.

Under his direction, Moebius entered The World’s 50 Best Bars list, ranking 33rd in 2024 and climbing even higher in 2025. He has also appeared as a speaker and consultant at international bar events, such as the 100% French Bars with Giovanni Allario podcast (2021), where he discussed sustainable sourcing and the creative identity of French cocktail bars. 

His contribution to the global cocktail scene lies in bridging gastronomy and mixology, promoting Italian ingredients through refined, chef-driven drinks, and elevating the bar experience into a space of cultural dialogue. With SETE, he continues to champion creativity and accessibility in mixology, both for professionals and home enthusiasts.
