Sommelier from Umbria, Micol Tonti now oversees the wine cellar at Contraste in Milan. After studying design, she chose hospitality, building an international path that spans AIS training, experience in Italy and the UK, and her 2022 arrival alongside chef Matias Perdomo.
Born in 1986, Micol Tonti grew up in Umbria, where her parents ran an agriturismo. It was there, within the family business, that she first understood the true meaning of hospitality—an experience that would remain a guiding principle throughout her career.
She later moved to Milan to study design and began working in an office, but soon realized her calling lay elsewhere. Drawn to the world of wine and hospitality, she pursued AIS certification, embarking on a path that combined discipline with personal sensitivity.
Her professional journey began at Erba Brusca in Milan, an important training ground that became a springboard for new opportunities. She went on to gain further experience in Italy before moving to London and the UK, where she encountered a variety of perspectives that broadened her vision as a sommelier and refined her international outlook.
A turning point came in 2022, when she joined Contraste, the Michelin-starred Milanese restaurant led by chef Matias Perdomo. Here, Tonti took charge of the wine cellar, bringing an approach that weaves together research, elegance, and a personal storytelling of wine, always in service of the dining experience.
