Romagna‑born Camilla Corbelli is maître, patron and head sommelier at Abocar due Cucine (Rimini, one Michelin star since 2018). Forbes Italia named her among the “2025 Masters of the Glass” for outstanding service and a 900‑label cellar.
Originally trained as a cook—including a stage with Mauro Uliassi—Corbelli met Argentine chef Mariano Guardianelli while both were at El Celler de Can Roca. In 2013 the pair opened Abocar due Cucine (“to bring closer,” in Spanish) in Rimini’s old town, with Guardianelli in the kitchen and Corbelli directing the dining room.
She blends warm Romagnan hospitality, Spanish precision and kaiseki‑style pacing: a few tables, minimal mise‑en‑place and a courtyard where she pairs menus with Champagne, Franciacorta and German Riesling. The restaurant earned its Michelin star in 2018 and has retained it through the 2025 edition.
In 2023 Corbelli and Guardianelli launched “Hadria 37,” a project focused on sustainable northern‑Adriatic fishing and gyotaku fish prints, echoed in tasting menus “Piccolo Pesce” and “Menu Hadria,” where bespoke cocktails open the meal.
Corbelli’s wine list—curated with her young daughter—features 900 labels, highlighting grower Champagnes and Emilia‑Romagna orange wines. Temperature‑zoned storage and guéridon service earned her a spot in Forbes Italia’s “25 Masters of the Glass 2025.”
