Tess Posthumus has transformed the Dutch cocktail scene through constant research into local techniques and ingredients. Winner of numerous international awards between 2015 and 2019, she is co-founder of Flying Dutchmen Cocktails (2017) and Bar Dutch Courage, two benchmarks for European mixing.

Tess Posthumus began her career frequenting Amsterdam's historic bars, fascinated by the creative potential of mixology. While studying marketing, she delved into techniques and procedures through specialized courses, competitions and research on the world of beverage. The experience she gained led her to distinguish herself in various international competitions, culminating in awards that placed her among the most appreciated European bartenders.

The desire to share knowledge led her to co-found, together with Timo Janse, Flying Dutchmen Cocktails in 2017, a venue in the heart of Amsterdam dedicated to the history and evolution of cocktails. Later, he opened Bar Dutch Courage, focused on traditional Dutch spirits, such as genever, and carefully selected botanicals. Both businesses are founded on the concept of experience: from attentive service to the nuances of ingredients, every detail contributes to creating a unique sensory journey.

Alongside his work as a bar owner, Posthumus writes articles and books on the sector, participating in publishing projects aimed at promoting the culture of conscious drinking. She has also collaborated with educational initiatives and trade shows of European significance, such as the Perfect Serve Barshow, to train new generations of professionals. Tess's approach, attentive to balancing flavors and studying Dutch tradition, aims to restore an identity to cocktails that is rooted in the land but open to international contamination.
