Alice Bussi

Alice Bussi is an Italian hospitality professional, co-owner and manager of Hide and Fox restaurant in Saltwood, Kent. Her international career and dedication to high-quality service have contributed to the restaurant's success and recognition in the British culinary scene.

Originally from Liguria, Italy, Alice Bussi attended the renowned Stresa Hotel School on Lake Maggiore for five years, where she received comprehensive training in the hospitality industry. Her career led her to work in prestigious European establishments, including the five-star Gallia Palace in Tuscany, as well as experience in St. Moritz, Switzerland, and Acchen, Germany.

After earning her AIS sommelier diploma, she moved to Bath Priory in the United Kingdom, where she worked for four years as a sommelier and later as restaurant manager, working with Michelin-starred chef Sam Moody. In 2016, she launched Beach House Restaurant in Oxwich, Gower, which won the AA Restaurant of the Year award for Wales. Her success led her to become group food and beverage manager for the Seren Collection, overseeing four businesses. In 2018, Alice was awarded the prestigious title of Food and Beverage Manager of the Year at the Hotel Catey Awards.

In June 2019, together with her partner Allister Barsby, Alice opened Hide and Fox in Saltwood, Kent. The restaurant offers modern British cuisine in an intimate and relaxed setting, with an emphasis on carefully selected seasonal ingredients and a fine wine selection. Alice's dedication to impeccable service and quality helped earn the restaurant a Michelin star in 2021 and a second in 2025.
