Franck Derouet is the owner and chef of Clos des Sens in Annecy-le-Vieux, a restaurant that will receive three Michelin stars in 2019. With a "vegetable and lacustrine" cuisine, he celebrates the local flavors of the region's lakes and is committed to sustainability through a large permaculture garden.
Franck Derouet began his career in major international establishments, including chef Georges Blanc's. In 2011, he joined the team at Clos des Sens, where he worked under Laurent Petit. Over time, he became a key figure in the kitchen, particularly for his innovative approach and sensitivity to local, vegetable and sea ingredients. In 2023, he took over the restaurant with sommelier Thomas Lorival, marking a rare transition for the renowned three-starred.
The menus celebrate the biodiversity of the surrounding areas, such as Lake Annecy and Lake Bourget, as well as the restaurant's own permaculture garden with more than 200 varieties of vegetables. Thanks to this respect for the land, each dish represents a synergy between nature and cuisine, with raw materials harvested a few kilometers from the table and processed without refrigeration to preserve their freshness and authentic flavor.
In collaboration with Lorival, Derouet has introduced unusual combinations of dishes and non-alcoholic beverages, such as herbal teas and infusions, made directly from the plants in the garden, offering guests a unique sensory experience and earning them the green star, a recognition that underscores their commitment to environmental sustainability and the enhancement of local resources.
