Born in 1987 in Canelli, Enrico Marmo has been managing the Balzi Rossi restaurant in Ventimiglia since March 2022. In November of the same year, his cuisine was awarded the coveted first Michelin Star and received the Gambero Rosso 2023 “Tradizione Futura” award thanks to a contemporary Ligurian cuisine rooted in the products of the Ponente region.
An ALMA graduate, Marmo trained at Gellius in Oderzo, worked the appetiser station at Cracco in Milan and spent five years as sous-chef to Davide Palluda at All’Enoteca in the Roero. He first arrived at Balzi Rossi in 2016 as executive chef, helping revive the landmark on the French border.
In 2019 he moved inland to helm Osteria Arborina in La Morra, where he retained its Michelin star and championed kilometre-zero produce in the Langhe hills.
Returning to Balzi Rossi in March 2022, Marmo won back the star that had been lost for 13 years (Michelin Guide, November 2022). His dishes weave Ligurian seafood, herbs from the Hanbury Gardens and Piedmont memories—such as Red mullet, Tropea onion & hazelnut and Rabbit ravioli scented with thyme.
In October 2022 Gambero Rosso named him “Tradizione Futura” Chef for re-imagining regional heritage with modern technique: sourdough grissini, broths from vegetable trim and Josper-grilled meats from small Ligurian farms.
